DeLeon Springs State Park

I've lived here for over five years and hate to admit that I have never eaten at the Old Spanish Sugar Mill & Griddle House restaurant in DeLeon Springs State Park. My husband is always checking out
www.visitwestvolusia.com for things to do in our area and suggested we go for breakfast over the holiday break. Finally! We got to the restaurant early, right as the park opened, because we had heard lines form fast creating a lengthy wait of 45 minutes or more. Read more…

Of course I ordered the pancakes and picked three toppings; chocolate chips, bananas and pecans. We were told how to cook the pancakes on the griddle built into our table. My husband ordered eggs and quickly took over. He decided to get creative and made holes in the middle of his toast, put it on the grill and dropped his eggs in. We were like kids! Cooking had never been so much fun.

After breakfast we began to explore the park. There were kayaks, canoes and paddle boats for rent that allow you to explore the spring run which flows into the waters surrounding the Lake Woodruff National Wildlife Refuge. We'll try that on another trip to the park when the weather is warmer. It was nice to see a young family, rods in hand, fishing just past the waterfall of the spring run. I didn't realize that there is a passenger boat that goes out of the park called the Fountain of Youth Eco/History Tours.

We continued our exploring with cameras at the ready and enjoyed a ½ mile nature walk on the Wild Persimmon Trail where we spotted hover flies, spiders with magnificent webs, cypress trees and were showered with falling golden leaves. My husband was the first to spot "Old Methuselah", a huge bald cypress that is more than 500 years old!

We spent two glorious hours at the park. We will definitely add this to our "see and do" list for out of town guests. Next visit I definitely want to take the eco boat tour, try out one of those canoes, pack a lunch and take advantage of the wonderful picnic pavilions.
